    FARMHOUSE FRUIT CAKE
    • 220g Self Raising Flour
    • 110g butter (rubbed in)
    • 110g white sugar
    • 200 grams mixed dried fruit
    • 1 teaspoon mixed spice
    • 1 egg
    • 5 tablespoons of Milk

    Sprinkle Demerara Sugar on top, press with back of spoon (I didn't have Demerara, only soft brown so used that and it might be why the cake is a little dark on top - it certainly isn't hard baked)

    Add all ingredients to a soft dropping consistency

    8 oz self raising flour

    2 oz butter (I only cook with Benecol - I don't know if that gives a softer texture)

    2oz sugar

    3 oz of fruit (mix of chopped ready to eat apricots, ready to eat cranberries) or Sultanas or whatever fruit you want to try

    In a mixing jug add 1 large egg made up to 1/4 pint with milk (I use semi skimmed - may be even better with whole milk)

    Place a greaseproof cake liner in your cake pan

    Ingredients

    • extra virgin olive oil
    • 2 cloves garlic , peeled and finely sliced
    • ½ fresh red chilli , halved, deseeded and finely sliced

    Home Made Chicken Curry

    I make this curry paste to my own recipe, it's cheaper than shop bought jars and you know exactly what has gone into it, especially what sort of oil - it's a medium curry flavour, if you want it hotter add more chilli.

    You could add other meats or vegetables of your choice - you would need to adjust cooking times accordingly.

    Barbecued steak with chips cooked in the skillet in 'oven' mode! You can't really do many chips but they are lovely as a garnish and with the steak and salad it makes a filling meal.

    Ingredients:

    Ingredients:

    2 Trout - cleaned and heads removed
    250 ml White Wine
    2 Bay leaves
    2 Garlic Cloves - chopped
    2-3 Tsp Olive Oil
    75 g Butter
    2 tsp lemon juice
    1 tbsp Chopped fresh Parsley or dried

  • Quick Tortellini Pasta in a Creamy Sauce

    This recipe was sent in by a reader - thank you.

    We tried this recipe using Morrison's Spinach and Ricotta Tortellini. Recipe worked well but needed approx. half a pint of milk. Sauce was a little bland and next time I think I'd add some herbs for a bit more flavour. Didn't have any cream so that might have made a difference if added.
    Overall it was a nice recipe, extremely quick to make so ideal for a rush meal. Made quite enough for two people, it's very filling.

    Absolutely delicious - thanks John and Wendy for this recipe.

    No cooking required but a fridge to chill it in is useful.

    It’s not just pasta for which we have to thank the Italians. Their sensational Tirumisu – literally “pick-me-up” – is one of the world’s best desserts. A delicious combination of sponge layer and creamy filling, flavoured with coffee and Marsala, Tiramisu should not be missed!
