Recipe - Tuna and Ginger Salsa

  • Recipe - Tuna and Ginger Salsa

    Tuna with Ginger Salsa

Lovely on a warm summer day served with a salad garnish and a glass of chilled white wine.

2 Tuna steaks (or try swordfish which is very tasty)
    For the marinade:
    4 tbsp Olive Oil
Juice of one lemon (or use bottled lemon juice)
2 tbsp chopped Coriander (or use dried)
1 tsp grated fresh ginger (or use 'lazy ginger' in a jar from the supermarket!)

    For the Salsa:

    2 large tomatoes, diced
    2 spring onions, chopped
1 tsp grated fresh ginger (or again use 'lazy ginger' in a jar from the supermarket!)
    1 avocado, diced
2 tbsp chopped coriander (or use dried)
Juice of half a lime (or use bottled lime juice)

Mix the marinade ingredients and marinade the tuna steaks for at least 5 minutes but an hour in the fridge will help give more flavour.
Make the salsa by combining the salsa ingredients.

Cooking the Tuna (Timing will depend on thickness):

Barbecue the tuna for approx. 5 minutes each side or until cooked spooning over any remaining marinade.
Grill for approx. 10 minutes each side or until cooked spooning over any remaining marinade.
Cook in one half of the skillet (or a large pan) make sure it's well oiled, preferably with olive oil, and cook for approx. 7 minutes each side or until cooked spooning over any remaining marinade.

Below I am showing the chutney recipe, the changes I make to this I have typed in red, people can adjust as required. I usually make 3 times the batch to save on electricity, maybe best to try the smaller quantity to see how you like it.

      • 200 g soft brown sugar

      Wheatgerm n' Honey Yogurt

Healthy, tasty and refreshing, ideal as a light sweet after a large meal or simply enjoy on it's own if you feel peckish.
Wheat Germ is high in Vitamin E and Folic Acid, natural yogurt is good for the digestion so it's one of those snacks you can enjoy without feeling guilty!

1 small pot of natural yogurt per person
      1 tsp Honey per pot
1 tbsp Natural Wheat Germ per pot

    • Quick Tortellini Pasta in a Creamy Sauce
      by Pauline
This recipe was sent in by a reader - thank you.

We tried this recipe using Morrison's Spinach and Ricotta Tortellini. Recipe worked well but needed approx. half a pint of milk. Sauce was a little bland and next time I think I'd add some herbs for a bit more flavour. Didn't have any cream so that might have made a difference if added.
Overall it was a nice recipe, extremely quick to make so ideal for a rush meal. Made quite enough for two people, it's very filling.

    • Tirumisu (sweet)
      by Pauline

Absolutely delicious - thanks John and Wendy for this recipe.

No cooking required but a fridge to chill it in is useful.

It’s not just pasta for which we have to thank the Italians. Their sensational Tirumisu – literally “pick-me-up” – is one of the world’s best desserts. A delicious combination of sponge layer and creamy filling, flavoured with coffee and Marsala, Tiramisu should not be missed!
