  • Recipe - Sea Bass with Chorizo and Tomatoes

    Sea Bass with Chorizo and Tomatoes

    This was cooked in the double skillet but a pan with a lid will do the same.

    Ingredients:

    2 Sea Bass Fillets
    1 large Red Onion chopped
    1 Clove Garlic chopped
    150 g Chorizo Sausage cut into pieces
    Handful of Black Olives, cut in half
    8 Cherry Tomatoes
    2 Sprigs Thyme or a teaspoon of dried.
    Salt and pepper to taste

    Method:

    Fry the onion and garlic until the onion is translucent
    Add the chorizo and cook gently for a few seconds to release the lovely paprika oil
    Stir in the olives, tomatoes and thyme.
    Season with salt and pepper and then lay the fish on top. Cover with the top part of the skillet and close. (see picture below)
    Cook over a low - medium heat (Not too high or the sauce will burn) for about 10 - 15 minutes until the fish is cooked and the tomatoes are soft and bursting.
    A really tasty meal which can be served on it's own, with a side salad, rice, garlic bread or potatoes.

    All these recipes are tried and tested in our van using just two rings of the gas cooker or BBQ. Unless otherwise stated they serve 2 or more if you have a small appetite

    • Quick Tortellini Pasta in a Creamy Sauce

      This recipe was sent in by a reader - thank you.

      We tried this recipe using Morrison's Spinach and Ricotta Tortellini. Recipe worked well but needed approx. half a pint of milk. Sauce was a little bland and next time I think I'd add some herbs for a bit more flavour. Didn't have any cream so that might have made a difference if added.
      Overall it was a nice recipe, extremely quick to make so ideal for a rush meal. Made quite enough for two people, it's very filling.

      No cooking required but a fridge to chill it in is useful.

      It’s not just pasta for which we have to thank the Italians. Their sensational Tirumisu – literally “pick-me-up” – is one of the world’s best desserts. A delicious combination of sponge layer and creamy filling, flavoured with coffee and Marsala, Tiramisu should not be missed!

      Ingredients:

      200g Dried Penne Pasta - Pasta Tubes
      4 tbsp Green Pesto
      1 Tin of Asparagus Spears (if you prefer fresh then you will need to cook them first)
      1 Red Pepper
      1Yellow Pepper
      1Green Pepper
      1 small Tub Natural Yogurt
      Good handful of fresh Basil leaves - reserve a few for garnish.
      Salt and pepper to taste
      1tbsp Olive Oil
      A little grated cheese to garnish. (optional)...

      Homemade (van made? ) Pappardelle with quick tomato sauce

      Ingredients

      • extra virgin olive oil
      • 2 cloves garlic , peeled and finely sliced
      • ½ fresh red chilli , halved, deseeded and finely sliced
      • 1 small bunch of fresh basil , leaves picked
      • 400 g tinned chopped tomatoes
      • salt
      • black pepper
      • 250 g fresh lasagne sheets - doesn't work too well with dried as they are hard to cut into slices. You could try...

      Barbecued steak with chips cooked in the skillet in 'oven' mode! You can't really do many chips but they are lovely as a garnish and with the steak and salad it makes a filling meal.

      Ingredients:
      2 Sirloin Steaks (or cut of your choice)
      300g frozen oven chips (crinkle-cut type cook better in the skillet oven)
      8 Mushrooms
      A little Olive Oil
      Salad of your choice i.e:
      Shredded Lettuce
      Sliced Tomatoes...
