  • Recipe - Seafood Marinara

    Seafood Marinara

    Ingredients:

    4 Shallots finely chopped
    1 Garlic clove chopped
    5 Tomatoes chopped
    1 small red pepper chopped
Seafood of your choice e.g. Mussels, Scallops, Prawns
    2 small glasses white wine
    2 tsp lemon juice
    4 tbsp cream
    2 Tbsp Olive Oil
    Large knob of butter
2 tbsp Basil freshly chopped or dried
    Salt and Pepper
    Crusty bread

    Method:

Fry the shallots, pepper and garlic gently in the oil and butter until soft and the onion translucent
Add the tomatoes, lemon juice and wine and cook gently over a low heat for about 5 minutes to allow the liquid to reduce
Add the seafood and cook through - time will depend on what you use but scallops, mussels and prawns will take about 4 - 5 minutes depending on size, make sure it is piping hot and cooked!
Stir in the cream and add seasoning to taste
Serve with chunks of crusty bread

    • Quick Tortellini Pasta in a Creamy Sauce

This recipe was sent in by a reader - thank you.

We tried this recipe using Morrison's Spinach and Ricotta Tortellini. Recipe worked well but needed approx. half a pint of milk. Sauce was a little bland and next time I think I'd add some herbs for a bit more flavour. Didn't have any cream so that might have made a difference if added.
Overall it was a nice recipe, extremely quick to make so ideal for a rush meal. Made quite enough for two people, it's very filling.

Absolutely delicious - thanks John and Wendy for this recipe.

No cooking required but a fridge to chill it in is useful.

It’s not just pasta for which we have to thank the Italians. Their sensational Tirumisu – literally “pick-me-up” – is one of the world’s best desserts. A delicious combination of sponge layer and creamy filling, flavoured with coffee and Marsala, Tiramisu should not be missed!
