  • Marinaded Trout

    Marinaded Trout

    Ingredients:

2 Trout - cleaned and heads removed
    250 ml White Wine
    2 Bay leaves
    2 Garlic Cloves - chopped
    2-3 Tsp Olive Oil
    75 g Butter
    2 tsp lemon juice
1 tbsp Chopped fresh Parsley or dried

    Method:

Put the wine, bay leaves and garlic in a large dish and add the trout, leave to marinade for 30 minutes or longer if possible.
Remove the trout and reserve the marinade.
Fry the trout on both sides in the olive oil and 50g of the butter
When cooked remove the trout (approx. 20 minutes but it really depends on size and thickness - fish should be a nice pink inside not a dark raw colour!)
Add remaining butter to pan along with the lemon juice and parsley, simmer until reduced and thickened slightly.
    Pour over trout.
    Serve with a side salad.

    • Quick Tortellini Pasta in a Creamy Sauce

This recipe was sent in by a reader - thank you.

We tried this recipe using Morrison's Spinach and Ricotta Tortellini. Recipe worked well but needed approx. half a pint of milk. Sauce was a little bland and next time I think I'd add some herbs for a bit more flavour. Didn't have any cream so that might have made a difference if added.
Overall it was a nice recipe, extremely quick to make so ideal for a rush meal. Made quite enough for two people, it's very filling.

Absolutely delicious - thanks John and Wendy for this recipe.

No cooking required but a fridge to chill it in is useful.

It’s not just pasta for which we have to thank the Italians. Their sensational Tirumisu – literally “pick-me-up” – is one of the world’s best desserts. A delicious combination of sponge layer and creamy filling, flavoured with coffee and Marsala, Tiramisu should not be missed!
