  • Home made Pappardelle

    Homemade (van made? ) Pappardelle with quick tomato sauce

    Ingredients

    • extra virgin olive oil
    • 2 cloves garlic , peeled and finely sliced
    • ½ fresh red chilli , halved, deseeded and finely sliced
    • 1 small bunch of fresh basil , leaves picked
    • 400 g tinned chopped tomatoes
    • salt
    • black pepper
    • 250 g fresh lasagne sheets - doesn't work too well with dried as they are hard to cut into slices. You could try pasta spirals or shells too.
    • cheese, freshly grated, to serve

    Method

    Heat a large frying pan over a medium heat and add a good helping of olive oil.

    When the oil is hot, add the garlic and chilli and fry until lightly coloured.

    Drop in most of the basil, keep a few for decoration – stand back as it might spit in the oil – after a few seconds, add the tomatoes.

    Bring to the boil and simmer for about 5 minutes.

    While this is simmering bring a large pan of salted water to the boil.

    Cut the lasagne sheets into strips with a knife or a pastry wheel. As mentioned in the ingredients this does not work very well with dried lasagne sheets as you cannot break them into strips and trying to cut them once cooked is very hard. However, you could try using dried pasta shapes as an alternative.

    When the water is at a rolling boil, add the pasta strips and cook for a few minutes until just al dente.

    Drain the pasta strips and stir into the warm sauce.

    Sprinkle with the grated cheese and the reserved basil leaves and serve immediately.

    • Quick Tortellini Pasta in a Creamy Sauce

      This recipe was sent in by a reader - thank you.

      We tried this recipe using Morrison's Spinach and Ricotta Tortellini. Recipe worked well but needed approx. half a pint of milk. Sauce was a little bland and next time I think I'd add some herbs for a bit more flavour. Didn't have any cream so that might have made a difference if added.
      Overall it was a nice recipe, extremely quick to make so ideal for a rush meal. Made quite enough for two people, it's very filling.

      Absolutely delicious - thanks John and Wendy for this recipe.

      No cooking required but a fridge to chill it in is useful.

      It’s not just pasta for which we have to thank the Italians. Their sensational Tirumisu – literally “pick-me-up” – is one of the world’s best desserts. A delicious combination of sponge layer and creamy filling, flavoured with coffee and Marsala, Tiramisu should not be missed!

      Ingredients:

      200g Dried Penne Pasta - Pasta Tubes
      4 tbsp Green Pesto
      1 Tin of Asparagus Spears (if you prefer fresh then you will need to cook them first)
      1 Red Pepper
      1Yellow Pepper
      1Green Pepper
      1 small Tub Natural Yogurt
      Good handful of fresh Basil leaves - reserve a few for garnish.
      Salt and pepper to taste
      1tbsp Olive Oil
      A little grated cheese to garnish. (optional)...

      Steak and Chips - Romahome style!

      Barbecued steak with chips cooked in the skillet in 'oven' mode! You can't really do many chips but they are lovely as a garnish and with the steak and salad it makes a filling meal.

      Ingredients:
      2 Sirloin Steaks (or cut of your choice)
      300g frozen oven chips (crinkle-cut type cook better in the skillet oven)
      8 Mushrooms
      A little Olive Oil
      Salad of your choice i.e:
      Shredded Lettuce
